Creamy Cilantro Garlic Sauce: Pollo Tropical Inspired

This cilantro garlic sauce is a creamy, flavorful sauce made with fresh lime, herbs, and garlic. This cilantro sauce is super easy to whip up and adds a bright lime cilantro kick to any meal.

Ingredients

  • 1 cup fresh cilantro loosely packed
  • ½ cup fresh mint leaves
  • Juice of 1 lemon about 2–3 tablespoons
  • 2 cloves garlic minced
  • 1 piece Jalapeño
  • 1 cup Greek yogurt or sour cream
  • Salt & pepper to taste

Instructions

  • Roughly chop the cilantro and mint. This helps them blend more smoothly and keeps long stems from wrapping around the blades.
    1 cup fresh cilantro, 1/2 cup fresh mint leaves
  • Toss the cilantro, mint, jalapeño, garlic, lemon juice, yogurt, and a pinch of salt and pepper into your blender or food processor. Scrape down the sides once or twice, then blend again. You want the sauce creamy with no big chunks left.
    Juice of 1 lemon, 2 cloves garlic, 1 piece Jalapeño, 1 cup Greek yogurt or sour cream, Salt & pepper
  • Add more lemon for tang, salt for flavor, or an extra bit of jalapeño if you like it spicier. Serve right away or chill it for an hour in the fridge to let the flavors come together.

Notes

If you don’t have a blender, finely chop the herbs and garlic, then whisk everything together. It won’t be as smooth, but it still tastes amazing.
