Simple and quick Ramp pasta recipe

This simple ramp pasta recipe uses the fresh seasonal ramp as the main ingredient to turn ordinary pasta dish into outstanding in its unique taste and nutritional value.

Ingredients

  • 5 handful ramp wild garlic
  • 1 clove garlic
  • 1 onion or wild garlic bulb
  • 1 spring onion
  • 2 tablespoon olive oil
  • 300 g tagliatelle 10 oz, or other pasta of your choice
  • 10 ml cream
  • ½ cup Parmesan cheese finely grated
  • black pepper Freshly ground

Instructions

  • Start to chop the onion (or ramp bulb), garlic clove and spring onion
  • Heat olive oil in a large skillet over medium heat and fry the onion, then add garlic with green onion as a last.  Fry for 10 minutes on low heat stirring occasionally
  • Put a large pot of water on to boil. Cook the pasta as per the cooking instructions. 
  • Place on a cutting board cleaned wild garlic and cut in into small pieces. Add it to the mixture with ½ teaspoon salt and stir occasionally.
  • Turn the heat to low and cook, until the ramp is tender (5 minutes)
  • Add a cream.
  • Serve with some ramp leaves on the side and shredded parmesan on the top

Notes

  • If you wish to replace olive oil with pancetta cook 4 slices of pancetta covered until crisp and the fat is rendered, then continue as per direction.
  • if you happen to have ramp bulbs - use it instead of onion
