Greek Mountain Tea: Greek tea for Longevity

Ingredients

  • 2 teaspoons sideritis leaves, flowers or stems dried or 1 stalk fresh
  • 1 cup water boiled

Instructions

  • Bring one cup (8 ounces) of water to a boil.  Place 2 heaping teaspoons of the dried herb or one stalk of fresh (you can cut it or break it in smaller pieces) into a pot or mug and pour the hot water over the tea.
  • Cover and let it steep for 5-7 minutes. Strain and be careful not to exceed the time of 10 minutes as it may result in a slightly bitter taste.
  • Add a spoonful of honey or syrup and one squeeze of lemon.

To make shepherd tea cold infusion

The trick to making Shepherd's Tea as a cold infusion is to brew a larger, stronger batch. I like to use this glass pitcher that allows me to keep it covered in the fridge. This ensures the flavor stands up to the ice without becoming weak or watery. Use 4 stalks for 3 cups of water and steep the tea for 10 minutes, then let it cool to room temperature before placing it in the fridge. I like to add honey, lemon juice or mint leaves for a refreshing twist.
