Wash and scrub the potatoes well. Leave the skin on if desired, then cut them into evenly sized fries. Preheat the oven to 220°C (425°F).
Place the fries in a large bowl. Drizzle with olive oil and sprinkle with salt the za'atar. Toss until the potatoes are evenly coated.
Line a baking sheet with parchment paper and spread the fries in a single layer, making sure they are not overcrowded.
Bake at 220°C (425°F) for 25–30 minutes, turning halfway through, until golden brown and crispy. Serve immediately with your favorite sauce.

Depending on the size of the air fryer and carrot quantity, you may have to split it into 2-3 batches. Please place them in a single layer in the air fryer basket for the best result. Cook them for 12-15 minutes, and shake the basket about halfway through. For crispier fries, you may have to put them back for another 2-3 minutes.
