I recently discovered this fantastic side dish or snack and feel guilty that I didn’t find it earlier. I used to fry vegetables in oil, but now I prefer baking them in the oven for a healthier and tastier outcome with a delightful crispiness. While I usually make herb-roasted sweet potatoes or marinated Brussels sprouts as a side dish, carrots don’t get cut. Probably because I’m not a big fan of carrots, I wasn’t, respectively. This recipe changed my preconceptions about carrots.

You can use any type of carrot, including baby carrot. You can also experiment with various colors. Just make sure you slice and cut them into the same-size fry shapes.

The oil is important to get a nice crisp. Use any oil you have on hand; I prefer Olive Oil, but avocado oil or sunflower oil are also good choices.

The natural sweetness of the carrots pairs perfectly with the salty seasoning. You can play with the spices; herbal salts, garlic powder, cumin, onion powder, sriracha, pepper or paprika will work, too. Season them with your favorite herbs for regular and sweet potato fries.
How to Make Carrot Fries in the Oven
First step: Preheat the oven
Preheat oven to 425°F (220°C).
Second step: Cut the carrots and Parsley
Peel and cut carrots into fries. Finely chop the parsley.
Third step: Season the carrots
In a large mixing bowl, combine carrot fries with oil, seasoning, and fresh parsley, and toss to coat till carrots are coated with seasoning.
Fourth step: Roast the carrot fries
In the oven
Place on a parchment paper lined baking sheet in a single layer. Spread the carrot fries in a single layer and bake for 20-25 minutes, flipping halfway. Watch your carrot fries and pull them until the carrots are fork-tender and crisp outside.

Depending on the size of the air fryer and carrot quantity, you may have to split it into 2-3 batches. Please place them in a single layer in the air fryer basket for the best result. Cook them for 12-15 minutes, and shake the basket about halfway through. For crispier fries, you may have to put them back for another 2-3 minutes.

These carrot fries are the crispest when fresh. However, you can store any leftovers in an airtight container and just reheat them before serving. They will lack the crispiness.

- To achieve extra crispiness, Pat the carrot sticks dry with a paper towel to remove excess moisture. You can also add cornstarch to enhance their crispiness.
- Make sure to overcrowd the carrots; arrange them in a single layer on the baking sheet. When crowded, vegetables will steam in an oven.
- Flip the carrot fries midway through cooking time to ensure they cook evenly on all sides. If you are using your air fryer, shaking the basket halfway through cooking will help to cook up evenly.
- Make sure you use the parchment paper to help soak up some of the oils! Ours were a little wet.
- Every oven or air fryer cooks differently, so keep an eye on them and remove them once crispy and brown.
