This simple naked pizza recipe uses a handful of ingredients and cauliflower crust to create light yet crispy base, allowing the fresh toppings to shine with flavor.
My daughter returned from her friend’s house, raving about their pizza, saying it was unique, healthy, crispy, and perfect. I wondered what made this one so special since she’s really into healthy food and won’t eat regular pizza. I understood why this pizza stood out when she explained it to me.
We all know the traditional approach to pizza baking all the ingredients on one platter and letting them melt together into the final product. It doesn’t seem very fresh. But what if you could combine the classic pizza taste with a fresher, crisper style that leaves you feeling less guilty about indulging in this famous “fast food”?

Why you will love this recipe
- This recipe uses fresh, whole-food ingredients that align with longevity principles.
- Quick and Simple recipe that doesn’t require complex techniques, so you can whip up a delicious pizza with minimal effort.
- brings vibrant flavor and offers and a guilt-free option for pizza lovers.
Ingredients to make this naked pizza
Cauliflower pizza crust
this gluten-free pizza crust combines cauliflower, cheese (mozzarella, parmesan, etc.), and egg. If you want to whip it up yourself, follow this recipe. It is also lighter and crispier than traditional crust.
the best way to use the leftover of cauliflower is this cauliflower risotto.
Ricotta cheese
Ricotta cheese is a soft and creamy cheese made from the whey left over from the production of other cheeses like mozzarella. It is rich in protein, calcium, and vitamins while being relatively low in fat and sodium compared to other cheeses. It is also easy to spread on pizza.

Greek Yogurt
Greek yogurt is rich in protein and has a creamy texture. You can also use cream or regular yogurt instead, but Greek yogurt has a thicker consistency, which can add body and a subtle tanginess to the topping.
lemon
add zesty flavor and vitamin C.
Thyme
Fresh thyme is ideal but you can use the dried version as well.
Green salad
I used rapunzel, Feldsalat (Valerianella locusta), known also as nüssli salad (CH), Lambs Leaf lettuce (UK) or Mache lettuce
But you can use any fresh salad that you have available.
Olive oil
Honey
salt and pepper to taste

Instructions to make this vegetarian pizza
First step: Prepare the naked crust
Preheat the Oven to 200°C (392°F). Line a baking tray with parchment paper and place the pizza crust on the lined baking tray.
In a small bowl, mix olive oil, lemon juice, 1/3 of a bunch of chopped thyme, salt, and pepper. Drizzle this mixture over the pizza crust and bake it in the oven. Bake the pizza as per the instructions. For me, it was about 10 minutes, or until the edges were golden brown and the pizza was bubbling.
Second step: Prepare the Ricotta Topping.
While the pizza bakes, mix the ricotta cheese with Greek yogurt, lemon juice, the remaining thyme, salt, pepper, and honey with a mixer until smooth.

Third step: Prepare the salad
In a separate bowl, make a salad with your favorite greens and a dressing made of olive oil, lemon juice, salt, and pepper.

Fourth step: Assemble the Pizza
Once the pizza is ready, could you remove it from the oven? Wait a few minutes to cool the pizza before spreading the creamy ricotta mixture on top, then add the salad.

Variations
Spicy Variation
For those who like heat, add sliced jalapeños or red chili flakes to the toppings. You can also mix hot sauce into the olive oil drizzle for a spicy kick. Complement the ricotta topping with a dash of cayenne pepper.
Seafood Variation
Use shrimp or smoked salmon for a seafood twist. Add capers and a squeeze of lemon juice for added freshness. The ricotta topping and salad will still work well with this variation.
Mediterranean Variation
Add feta cheese, kalamata olives, and sun-dried tomatoes to incorporate classic Mediterranean flavors. Use oregano and basil for the thyme, and top with a balsamic glaze for a final touch. This pairs well with the ricotta topping and salad.
You can also try it with this homemade tomato sauce.
